Mashed Potatoes - Joy of Cooking

Ingredients:
2 medium potatoes, peeled & cut into large chunks
2 Tablespoons cream, half-and-half or milk
1 Tablespoon butter, plus extra for serving
Salt & pepper, to taste

Preparation:
Place potato chunks in enough water to cover & boil.
Boil potatoes until very tender.
Drain water from pan.
Place the potatoes in a large, heavy skillet or return to the pan and shake over medium heat until the pieces are mealy and dry.
Cover to keep hot with you heat in a small pan over low heat the cream and butter. Cover and do not let boil.
Meanwhile, quickly mash the hot potatoes, working out every lump. Whip with a fork while pouring in the hot milk and butter, then take about 30 seconds to whip the mixture until fluffy.
Stir in salt & pepper.
Serve at once, topped with a little more butter.
