Roasted Potatoes

Ingredients:
7 cups small red potatoes, quartered (about 2 lbs)
1 Tablespoon olive oil
½ teaspoon salt
¼ teaspoon black pepper


Preparation:
Combine potatoes, oil, salt and pepper, tossing well to coat.
Bake at 375° for 45 minutes or until potatoes are tender.
