Ingredients:
2 lbs flank steak
1 large onion, sliced
1 large bell pepper, thinly sliced
3 Tablespoons olive oil
2 garlic cloves, pressed
1 (15 oz) can tomato sauce
1 teaspoon salt
1 bay leaf
½ cup dry white wine
1 (2 oz) jar diced pimiento, undrained
Hot cooked white or yellow rice
Bring steak and enough water to cover to boil in a Dutch oven over medium high heat; boil 1 hour.
Remove steak, reserving 1 cup liquid.
Shred steak, set aside.
Sauté onion and bell pepper in hot oil in Dutch oven until tender.
Add reserved liquid, garlic, tomato sauce, salt, bay leaf & wine.
Stir in shredded steak.
Reduce heat to medium, and cook, stirring occasionally, 30-40 minutes.
Stir in pimiento.
Serve with rice.
