Ingredients:
6 chicken breasts, cooked* and diced
1 can cream of chicken or mushroom soup
16 oz. sour cream
1 small can chopped or diced mushrooms
1 stick melted butter or margarine
1 stack Ritz crackers, crushed in a Ziploc bag
2 Tbsp. poppy seeds
Preheat oven to 350°.
In a greased, shallow casserole dish combine: chicken, soup, mushrooms and sour cream.
In a separate bowl, mix together butter, poppy seeds, and cracker crumbs. Spread this over the chicken mixture.
Bake at 350° for 35 minutes.
Serves 8.
* To cook the chicken, cut it up into bite-sized pieces and saute it in a pan that has been sprayed with Olive Oil flavored Pam. Season with Celery Salt and Seasoning Salt and Pepper (or your favorite spices) and keep spraying with the Pam while it cooks.
